Fall is in the air, and I am thinking about comfort food—but of course with a healthy twist. One of my favorite things to eat during the Fall months is beans. They are easy to prepare, and high in fiber and protein. The best combination for me is beans and cornbread. This was always a family staple in my household, especially during the cooler months.
I remember my mother putting on a pot of beans before we went to school, and they cooked all day. As soon as we walked through the door you could smell the aromas of lima beans, some days red beans, and pinto beans. And of course, black-eyed peas (technically not a bean, but I had to include it).
